By far the MOST useful book I have ever encountered during my years of teaching has been:

Improve Your Scales by Paul Harris

These wonderful books work through the required scales for each violin grade, giving two little pieces to play in each key as well as several exercises called "finger fitness".

In the first book you will find a 'chart' beside each key, which shows beginner students that perhaps cannot yet read music where to put their fingers on the violin.  This is a wonderful accompaniment to seeing the music written on a stave, as it helps children to associate each note with a finger and a string.

The other book that I will always recommend is "Fiddle Time Joggers".

I use this book with all of my beginners, children or adults, they all love it!  There is a great accompanying CD, which helps to numb the horror of playing beginner violin tunes....which can be rather dreadful.  Instead, all of the tunes in this book become fun when played with the accompaniment.
